So tonight, hot and tired and needing a hit of healthy food, I made what I call Green Green Green Pasta. Sorry, but I can’t credit the original creator — I’ve forgotten where I found the idea for this. I didn’t make it up, but I’ve changed it to better fit my cooking style (i.e., fast and easy). The ingredients: spinach pasta, pesto, peas (yes, frozen who has time to shell peas!), zucchini, green onions, basil, red leaf lettuce and chicken (not green, but the dish needed some protein — also pre-cooked from Trader Joes. Hella easy).
While the water was taking its sweet time to boil, I cut up the zucchini into 1/2 rounds and saluted them with black pepper in a non-stick pan and tossed the peas into the microwave with a little salt and pepper. While the zucchini was cooking, I tore up the lettuce and put it in the bottom of a large bowl along with the chicken. I chopped some three green onions (white and green parts) and basil (occasionally stirring the squash). When the water boiled, I dropped in the spinach fettuccine, rescued the zucchini from burning and the peas from the microwave and added both to the bowl. When the pasta was cooked, I drained it and laid it in the bowl. I added a lot of pesto, then tossed everything until the pesto was mixed in. I added more pesto, and tossed some more. The I topped the yummy green bowl of healthy goodness with the green onions and basil. Total cooking time: about 10 minutes. More about Fast Dinners here.
